Scampi is a delicacy all around the world and as any BBQ lover will agree to grill anything will just make it better. Scampi usually refers to shrimp served along with white wine and garlic butter. It is a popular seafood dish and for an added twist to the conventional scampi dish, it can be grilled. Newbies in the BBQ world may feel grilling seafood at home is quite a daunting task. However, it isn’t really all that hard and even an amateur can successfully grill seafood right in their very own backyard. You’ll be sure to wow your family and friends at your next BBQ party with the following grilled scampi recipe.
1 ½ pounds of peeled and deveined shrimp
½ cup canola oil
¼ teaspoon red pepper flakes (can be skipped, based on personal preference)
10 garlic cloves
Chopped tarragon leaves
1 teaspoon fennel seeds, ground
1 zested and juiced lemon
Fresh thyme and parsley for garnishing
Salt and black pepper to taste
Preparing the marinade:
The first step in this recipe is preparing the marinade to soak the shrimp in. It is important to get the proportions of the ingredients just right while preparing the marinade as it is responsible for most of the flavors in your dish. A blender is required for this first step but a food processor would also work just as well. Place the shrimp in a large bowl. Mix the canola oil, red pepper flakes, garlic cloves and the fennel seeds together and blend the mixture together (or process in your food processor) until the garlic becomes a paste. Pour this paste onto the shrimp and make sure it is completely coated on all sides. Leave the shrimp to marinate for at least a half hour.
Grilling the shrimps:
Now it is time to get your grill ready. Preheat the grill at high heat. As it is heating up, you can take the shrimp out of the marinade. Carefully strain the shrimp and transfer onto the grill. Before beginning the process of grilling, season the shrimp with salt and pepper, depending on your preferences. Grill the shrimp for about two minutes on each side. At this stage, leave the shrimp a little undercooked as they will be cooked well in the sauce.
Place one stick of the unsalted butter in a sauté pan and let it melt over the grills. Add the lemon juice and zest, a little thyme and the tarragon leaves. Saute for about a minute. Next, add the shrimp and toss, letting it cook until it is well done. This should not take more than one minute at this stage. You can now add salt and pepper as desired. Garnish the shrimp with parsley and your grilled scampi is ready to be served.
This dish can be prepared by even those who have just started their BBQ journey and never before grilled seafood. Though it is simple to prepare, grilled scampi is a dish that is sure to impress!
