Breaded Fried Celeriac
· 6 fist-sized celeriac bulbs
· 6 tbsp. flour
· 1 tsp. pepper
· ½ tsp. salt
· 1 c. fine breadcrumbs
· 1 tbsp. dried parsley
· ¼ c. vegetable oil, or more
Peel and slice celeriac into ½ to ¾ inch rounds. Steam rounds until just tender (not soft), blanch by immersing into ice water until cool, then drain. Combine flour, pepper and salt. Combine breadcrumbs and parsley. Heat oil in skillet – there should be about 1/8 inch on the bottom of the pan. Dip each celeriac round (both sides) into flour mixture, then egg, then breadcrumbs. Fry until golden brown, then flip and fry on the other side. Serve immediately with lemon wedges, hot sauce or (if you’re feeling lowbrow) ketchup.2 Comments »

hello, i´m from portugal. My mother was in austria last year and she ate a kind of chips made with some strange root, she liked it so much that she bought seeds of the plant and brought homa, now we picked up this big root. I dont know the name, can that be celeriac? It´s a bit greenish...

Had some of your corn today- it was great!! Ears were maybe a little small, but were quite full and tasted great! We also really enjoyed the croissant, which didn't even make it to the car! :)
